Purple Cabbage Pita

My favorite Fancy Peasant Recipe to date.

Purple Cabbage Pita


  • 1 purple cabbage, shredded thin
  • 1/4 cup Fancy Peasant GEVOO
  • 1 onion, minced
  • 3 scallions, chopped
  • ½ bunch of flat leaf parsley, chopped
  • 1 egg
  • 1 pound feta
  • salt and pepper


  1. Sauté onion in GEVOO until golden brown
  2. Add cabbage and sauté about 5-10 minutes until almost soft (still lightly crisped).
  3. Let the mixture cool.
  4. Add egg, feta, scallion, flat leaf parsley, salt and pepper.
  5. Mix well and add to pita (use fillo dough or tigantes dough)
