Greek Garden Orzo Pasta

Y'all asked for it, and here it is in all its simple beauty. Add feta or any summer veg you fancy.

Greek Garden Orzo Pasta


  • 1 cup cooked orzo.
  • 1-2 pints of cherry or grape tomatoes, halved.
  • 1 cup tomatoes from another variety, diced.
  • 1 cucumber, cubed.
  • 1/2 - 1 cup olives, pitted and halved.
  • 1 bunch of scallions, diced.
  • 1 bunch of fresh dill, finely chopped.
  • 1 bunch of flat leaf parsley, chopped.


  • 1/2 cup of Fancy Peasant GEVOO
  • The zest of 1 lemon and its juice.
  • Teaspoon of Fancy Peasant Oregano Salt Blend
  • Fresh Greek oregano, chopped
  • Salt
  • Pepper
  • Mix all ingredients.


  1. Cook your orzo in generously salted water and dress with GEVOO.
  2. Add all vegetables, herbs, and the orzo in a large mixing bowl. Add dressing and mix well.
