These boiled greens are a staple in any Greek household. They are easy to prepare, delectable, and accompany any dish beautifully. Make them in a flash and double the recipe because they will be gone before you can blink. Any wild green will do!
2 bunches beet greens or 2 heads rainbow chard or any wild green
¼ cup Fancy Peasant GEVOO
4 sprigs of fresh green onion, sliced
2 garlic cloves, sliced
4 tablespoons red wine vinegar
Boil your greens in salted water about 5 minutes. Set aside to cool before roughly chopping
On medium heat, add GEVOO and sauté garlic and spring onion until fragrant (making sure not to burn).
Add boiled greens, salt and pepper. Sauté about 5 to 7 minutes.
