My father, Fotios, grew up in Vavouri, a small mountain village in Epirus where the land is harsh and the cooking is simple. He lived off of what he had: beans, wild greens, and oil from his own olive trees. He used to say his family was poor in everything but flavor.
When my father got sick, I started cooiking his food again, not to be fancy, but to feel close to him. The first think my hands remembered was fasolada, the white bean soup that simmered on our stove every winter, always finished with fresh olive oil.
Real olive oil and real food: the kind crafted for everyday wellness and rooted in the Blue Zone diet my ancestors lived by. It reminded me how much we've quietly given up — and how much comfort still lives in a single, nourishing pour.

Extra virgin olive oil contains polyphenols — bioactive compounds like hydroxytyrosol, tyrosol, and oleocanthal — that are the source of much of its documented benefit. Oleocanthal and hydroxytyrosol in particular are widely studied for their role in supporting cardiovascular health, reducing inflammation, and contributing to the functional benefits associated with Mediterranean diets — general research context, not a claim about this specific oil.
The EFSA (European Food Safety Authority) authorized a health claim that olive oil polyphenols contribute to protecting blood lipids from oxidative stress — for oils delivering at least 5mg of hydroxytyrosol derivatives per 20g (~250mg/kg). This is general category education, not a verified claim about this specific oil.
Polyphenols degrade with heat, light, oxygen, and time — which is why how an oil is stored matters as much as where it's grown.
