Beet and Walnut Pasta

I love the color of this sexy pink spaghetti almost as much as I love the flavor. Earthy, garlicy, lemony goodness, AND it's hot pink?!

Beet and Walnut Pasta


  • 1 pound spaghetti
  • 2 large beets - each cut into 4 pieces and boiled for 20-25 minutes
  • ½ cup raw walnuts
  • 1 garlic clove
  • Juice of 1 lemon
  • 1 teaspoon of vinegar red
  • ¼ cup Fancy Peasant GEVOO
  • Salt and pepper


  1. Cook your pasta in boiled water.
  2. Blend boiled beets, walnuts, lemon, vinegar, garlic, GEVOO, salt and pepper.
  3. Pulse until puréed.
  4. Add mixture to pan (medium fire) with pasta and mix well.
  5. Add finely chopped walnuts.
