These delicious bread rings and twists are the most comforting, and you can make them with your littles. They can be served as an appetizer, or like I prefer to eat them, as a full on meal with horiatiki salata. You can add whatever ingredients you fancy but the combination of the feta and spinach is pretty hard to beat.
Ingredients:
1 ¼ cup warm milk
2 ½ cups organic flour or 100% stone ground whole wheat organic four
1 package yeast
1 ¼ warm water
1 tablespoon sugar
1 cup Fancy Peasant GEVOO
10 oz. spinach, chopped fine
1 lb. feta cheese (we prefer goat and sheeps milk)
Knead dough until you have created a large smooth ball.
Cover dough with a kitchen cloth or plastic wrap and let rest in a warm place. Rest half an hour to 45 minutes before working.
Separate your dough into 6 to 8 smaller balls.
Work the spinach, feta, and olives into the dough.
For Twists: Roll each piece into a long snake-like piece approximately 12-15" long, or twist both ends into opposite directions.
For Rings: Knead each ball into a sausage shape, then gently turn ends towards each other to form a circle or koulouri. The rings should be roughly the same size.
Cover in sesame seeds.
Place on a lined baking sheet with parchment paper.
