Ingredients:
1 cup black eyes peas, soaked overnight
1/2 red onion, sliced
1 bunch scallion, finely chopped
1/2 bunch of fresh flat leaf parsley, chopped
Half pint grape tomato, halved
What you'll need
500ML Everything Olive Oil

Cook soaked beans for half an hour or until soft enough to eat (we like our beans firm but cooked through).
