Ingredients:
2 small organic butternut squashes, shredded
1/4 cup Fancy Peasant GEVOO
2 bunches of scallions, chopped
1 bunch of flat-leaf parsley, chopped
2 eggs
1 pound feta
Salt and pepper
What you'll need
1L Everything Olive Oil

Method:
Sauté chopped scallion in GEVOO until a little bit soft
Add butternut squash and sauté for 5-10 minutes until almost soft (lightly crisped).
Let the mixture cool.
Add egg, feta, scallion, flat-leaf parsley, salt and pepper.
Mix well and add to the pita.
Use our fillo recipie or tigantes dough.
