Butternut Squash Pita


  • 2 small organic butternut squashes, shredded
  • 1/4 cup Fancy Peasant GEVOO
  • 2 bunches of scallions, chopped
  • 1 bunch of flat-leaf parsley, chopped
  • 2 eggs
  • 1 pound feta
  • Salt and pepper


  1. Sauté chopped scallion in GEVOO until a little bit soft
  2. Add butternut squash and sauté for 5-10 minutes until almost soft (lightly crisped).
  3. Let the mixture cool.
  4. Add egg, feta, scallion, flat-leaf parsley, salt and pepper.
  5. Mix well and add to the pita.
  6. Use our fillo recipie or tigantes dough.
