Detox Lentil Soup

This vibrant soup is packed with folate, iron, magnesium, and zinc to boost energy, enhance mood, and ease cramps. Bursting with vitamin C from tomatoes, carrots, and lemons to help iron absorption, and finished with a splash of our gut-loving Red Wine Vinegar, it's the ultimate cozy meal or side dish. Pair with our sourdough croutons for an extra crunch.

Detox Lentil Soup

Ingredients:

  • 1 cup red lentils, soaked overnight and rinsed
  • 4 tbsp Fancy Peasant Greek Extra Virgin Olive Oil
  • 1 large onion, chopped
  • 3 medium carrots, peeled and diced
  • 2 medium tomatoes, blitzed (or 1 can of diced tomatoes)
  • 3 gloves garlic, minced
  • Fancy Peasant Greek Mountain Oregano Salts to taste
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 4 cups bone broth, vegetable broth or boiling water, or a combo of any of these
  • Half a lemon, juiced
  • 3 tbsp Fancy Peasant Red Wine Vinegar

Method:

  1. Add GEVOO, onion, carrot, garlic, tomatoes, lentils, Greek Mountain Oregano Salts, pepper, paprika and turmeric to pot
  2. Stir and add juice of half a lemon
  3. Add in your broth, water or mixture
  4. Heat to a boil
  5. Top off with Red Wine Vinegar
  6. Serve with more GEVOO as you fancy
