Fancy Peasant Lagana

Lagana is a traditional bread baked yearly to start the Lenten cleansing season. It’s super delicious and simple to make. Usually served with taramsalata, havla, dolmades, and calamari.

Fancy Peasant Lagana

Ingredients:

  • 4 cups bread flour
  • 1 1/2 cup lukewarm filtered H2O
  • 1 tablespoon dry yeast
  • 1/2 tablespoon salt
  • 1 tablespoon honey
  • 1/4 cup Fancy Peasant GEVOO


Syrup:

  • 1/2 cup water + 2 tablespoons honey
  • 4 tablespoons white sesame

Method:

  1. Add all the liquid ingredients and then the solids, knead into a soft dough.
  2. Leave it in a warm place to double in size for 40 minutes.
  3. Add some flour to your work surface and roll out the dough into 2 large ovals
  4. Using your fingertips press small holes all over the surface of your ovala without piercing it.
  5. Using a pastry brush spread the honey water all over the lagana and sprinkle with sesame to top.
  6. Let your Lagana rest for 15 minutes
  7. Bake at 350 F for 20 minutes until golden brown
