Ingredients:
1 large zucchini
1 medium/large eggplant
1 cup organic flour
1-2 cups Fancy Peasant GEVOO
Filtered water
Ice cubes
Sea salt
Method:
Using a mandolin or sharp knife, slice your veggies into paper thin chips.
Add flour to a ziplock bag with raw veg chips and shake until all the veg is lightly coated.
Pour enough GEVOO to reach at least halfway up the sides of the pan and heat well.
Dip the flour-coated veg in the ice water (making sure to shake off any access water) and then carefully place to the hot oil.
Tip: divide the chips into batches of no more than one cup each. Do not fry more than one batch at a time.
Give them a nice stir so they don’t stick, and cook until golden. (They should be lightly colored but not browned)
Drain on fresh paper towels or brown paper bags and place in a warmed serving bowl lined with paper towels. Sprinkle with loads of sea salt and serve.
Never coat the veg to keep them hot as they will immediately turn soft and soggy
Serve with our Fancy Peasant Tzatziki.
