Greek Branzino with Olives, Tomato & Herbs

Greek Branzino with Olives, Tomato & Herbs


  • 1 medium sized Branzino
  • 1 medium sweet onion, ribboned
  • 2 cloves garlic, chopped
  • 5 ounces ripe cherry tomato, halved
  • 10 Greek Olives, pitted and chopped
  • 1 teaspoon capers
  • Salt
  • Pepper
  • 1 tablespoon fresh flat-leaf parsley, chopped


  1. Clean your Branzino and pat dry. Salt and pepper generously.
  2. Add half a cup to GEVOO to large nonstick pan on medium heat. Add fish and cook through about ten minutes on each side.
  3. Set aside and let cool. Debone fish and head if you fancy.
  4. Using the same pan, heat to medium and add onion, garlic, tomato, olives and capers for about 8-10 minutes until they begin to soften.
  5. Add cleaned filet on top and garnish with flat leaf parsley, sea salt and fresh pepper.
