Greek Florina Peppers

The Florina pepper is grown in the northern Greek region of - you guessed it - Florina. Packed with a proper dose of fiber, folate, and iron, these gorgeous specimens perfectly accompany any dish.

Greek Florina Peppers


  • 4 large red peppers, washed
  • 2 small cloves of garlic, chopped finely
  • 7 tablespoons of Fancy Peasant GEVOO
  • 7 tablespoons red vinegar
  • Salt


  1. Preheat oven to 400°F
  2. Cover a sheet pan in parchment paper and place peppers on top
  3. Bake in the oven for about 40 minutes, flipping over half way through cooking time or until your peppers begin to blacken
  4. Remove from oven and place in an ice bath for about 5 minutes
  5. Peel the skin off the peppers, slice the peppers in half, and remove all seeds.
  6. Cut peppers in thin slices and place in a mixing bowl. Add garlic, two generous pinches of salt, GEVOO, and red wine vinegar, and mix.
  7. Serve cold.
