Greek Green Beans

Lathera are easy Greek stove-top dishes (like this one) that cook slowly for hours. The veggie and olive oil base plus slow cooking allow us to really absorb all the vitamins and nutrients more efficiently. Add a huge chunk of feta for a salty bite, and mop up the pot juices with sourdough!

Greek Green Beans

Ingredients:

  • 1 Onion, Chopped
  • 2 Garlic cloves, Minced
  • 2 Big Carrots, Sliced
  • 1 lb of Green Beans
  • 2 potatoes
  • 2 cups of tomato sauce
  • Plenty of Salt and Pepper
  • Fancy Peasant GEVOO
  • 2 Bay Leaves
  • 3 cups of Boiling Water

Method:

  • Cook down Onion, Garlic, and Carrots in GEVOO until soft and aromatic
  • Add Green Beans and Potatoes, Stir
  • Add Tomato Sauce, Salt, and Pepper, Stir
  • Add Bay Leaves and Boiling Water, Cover and cook for 30 minutes
  • Enjoy!
