Greek Tomato Soup

This is peasant food at its best- extremely healthy, hearty, and EASY to make in less than 30 minutes. Top with some crusty sourdough and raw liquid gold for the ultimate comfort food.

Greek Tomato Soup

Ingredients:

  • 4 cups of water
  • 2 cups vegetable stock
  • 1 cup of home-grown garden tomatoes blitzed, or a 15 ounce can of chopped tomatoes
  • 1/4 cup red wine (optional)
  • 1 small onion, diced
  • 2 carrots, passed through a grater
  • 4 tablespoons olive oil
  • 1 pound of orzo
  • Salt, Pepper, Red Hot Chili Flakes

Method:

  1. Add GEVOO, onion, and carrot to the pot and cook until tender
  2. Add orzo, tomatoes, red wine, tomatoes, salt, and pepper
  3. Cook until the orzo is tender :)
  4. Garnish with GEVOO and red pepper flakes
