Mediterranean Quinoa Burger

Mediterranean Quinoa Burger

Ingredients:

  • 1 ¼ cups cooked quinoa
  • 1 small leek, diced
  • 1 large carrot, grated
  • 1 medium onion, diced
  • 2 eggs
  • ¼ cup Fancy Peasant GEVOO
  • 1 large zucchini, grated (strain well)
  • 2 scallions, finely chopped
  • ½ bunch parsley, finely chopped
  • 1 garlic clove, grated
  • Salt and pepper

Method:

  1. Preheat oven to 375°
  2. Boil quinoa for 20-25 minutes until fluffy
  3. Gather your chopped veggies and herbs
  4. In a large mixing bowl, stir everything together
  5. Create small/medium sized balls and gently push down to form a patty
  6. Add your patties to parchment paper lined baking sheet
  7. Cook for 25 minutes and flip halfway through
  8. Dress up your kefte however you fancy
