Olive Oil Blondies

Ingredients:

Cookie dough:

  • ½ cup coconut sugar
  • â…” cup Fancy Peasant Extra Virgin Olive Oil
  • 1 cup gluten free all purpose flour
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 ½ cups dark chocolate, coarsely chopped

Brownie batter:

  • 1½ cups dark chocolate chips
  • â…” cup Fancy Peasant Extra Virgin Olive Oil
  • 4 large eggs
  • 1 ½ cup coconut sugar
  • 1 tsp vanilla extract
  • ½ cup gluten free all purpose flour
  • â…“ cup cocoa powder
  • ¼ tsp salt
  • Flaky sea salt

Method:

Preheat oven to 350°F and line a 9x9inch baking dish with parchment paper.


To make cookie dough:

  1. Combine coconut sugar, olive oil, eggs, and vanilla in a large bowl.
  2. Add baking soda and salt, then mix until the flour is fully incorporated.
  3. Fold in the chocolate chunks.
  4. Place the cookie dough in the refrigerator while you prepare the brownie batter.

To make dark chocolate brownie batter:

  1. Combine Fancy Peasant Extra Virgin Olive Oil and dark chocolate in a double boiler or a heat-safe bowl over a pot of simmering water.
  2. Melt chocolate over medium-low heat, stirring regularly until smooth, being careful not to burn the chocolate. Allow the melted chocolate to cool slightly before stirring it into the brownie mix.
  3. In a large mixing bowl, whisk together eggs, coconut sugar, and vanilla extract.
  4. Stir in the melted chocolate and Fancy Peasant Extra Virgin Olive Oil, then fold in the flour, cocoa powder, and salt. Mix until the batter is smooth.
  5. Using a scooper, scoop both the cookie dough and brownie batter into the prepared baking dish, alternating between the two until no more batter or cookie dough remains.
  6. Bake until the brownies and cookies have set and are nearly cooked through, about 40 minutes.
  7. Cool and serve.
