Olive Olive Granola

I love making homemade granola when I have a full house and need a no-fuss breaky as I prepare for an afternoon Christmas feast. The flavor combination of buttery olive oil and crispy oats is simple but extraordinary. 

Serve with creamy Greek yogurt and tons of fresh fruit!

Olive Oil Granola

Ingredients:

  • 4 tbsp Fancy Peasant Greek
    Extra Virgin Olive Oil
  • 2 cups of rolled oats
  • 3 tbsp puffed amaranth
  • 2 tbsp pumpkin seeds
  • Handful walnuts
  • Handful macadamia nuts or
    almond slivers
  • 1 cup of dried blueberries,
    figs, cranberries or cherries
    or a mix
  • 4 tsp cinnamon
  • 2 tsp cardamom
  • 1/2 tsp vanilla syrup or extract
  • A sprig of rosemary (optional
    but divine)
  • 2 tbsp honey

Method:

  1. First, toast your nuts of choice in a medium-heat skillet until they get dark brown.
  2. Add your oats, puffed amaranth, and pumpkin seeds and stir for about 10 minutes to ensure everything gets toasted equally.
  3. When the oats get a bit of color, turn down the heat and add your spices and rosemary.
  4. Mix and add your dried fruit.
  5. In a separate small pan, put honey and extra virgin olive oil
    together, heat it up, and stir a bit. When you start to see it bubble, take it off the heat and add it to your oats. Mix until it all comes together.
  6. Allow the granola to cool completely before transferring it into a clean, airtight glass jar.
