Olive Oil Orange Pie

Ingredients:
1 package of filo dough
2 eggs
1 cup FP olive oil
6 oz sugar (or coconut sugar)
9 oz of Fage Greek yogurt
2 teaspoons baking powder
The Zest of 2 oranges
A dash of vanilla
Syrup :
9 oz of sugar
2 cups of water
1 cup orange juice
1 cinnamon stick
2-3 slices of orange
What you'll need
1L Everything Olive Oil

Method:
Scrunch the filo dough (see video)
Bake the dough fillings at 250F for half an hour, let cool
Beat the eggs with the sugar for 10 minutes until the mixture becomes fluffy
Add the yogurt, olive oil, and orange zest and mix with a spatula
Crumble the baked filo dough into the mixture
Grease a baking pan with a few drops of olive oil and dust it with a bit of flour.
Transfer the mixture to the pan and smooth over
Place cut orange slices on top, and bake at 350F for 30 minutes.
Syrup:
Boil all the ingredients for 3 minutes and let cool.
As soon as it is cooked, immediately pour the simple syrup over it and let the pie absorb it for half an hour.
Serve plain or with ice cream :)
