Pea Cakes

Pea perfection — featured in the Greek City Times — our Love for Lent burger is a total hit.
Pea Cakes


  • 1 large onion, finely chopped
  • 2 scallions, finely chopped
  • 1 garlic clove
  • 3 cups of frozen peas
  • 1 ¾ almond flour or oatmeal
  • salt and black pepper
  • ½ bunch parsley
  • 1 tablespoon of psyllium husk (or corn starch)
  • ½ bunch fresh dill
  • ¼ cup Fancy Peasant GEVOO


  • In a large fying pan, heat GEVOO on medium fire and sautè onions, garlic, scallions, herbs, salt, pepper for 3-4 minutes. Let cool.
  • In a large mixing bowl, add your “pea blend”, organic oatmeal, olive oil, corn starch, sautéed herbs, onions, garlic and mix well
  • Lather your hands in olive oil, take a small amount of your mixture and form your patties
  • Pan fry in GEVOO or bake at 400° until golden brown
