  • 4 long green peppers, cleaned and cut into 4 pieces the long way
  • 5 ounces sweet cherry tomatoes, halved
  • A chunk of GOOD feta, crumbled into large chunks
  • Fancy Peasant GEVOO
  • Salt and pepper
  • Greek mountain oregano


  1. Heat 1⁄4 a cup of GEVOO in a medium-sized frying pan over medium-high heat and add peppers
  2. Sauté on both sides until they begin to turn golden.
  3. Add tomatoes and sauté about 2 minutes. Add feta crumbles and a tablespoon of oregano.
  4. Take off fire. Add a splash of EVOO, salt, and pepper.
