Sexy Spaghetti with Spinach Purée

Ingredients:
1 pound pasta
2 green onions or scallions, chopped
3 tablespoons dill, chopped
1 pound spinach
Salt and pepper
8-10 cherry tomatoes sliced in half for serving
¼ of a cup of Fancy Peasant GEVOO
¼ cup Κεφαλογραβιέρα cheese or Parmesan (optional)
Method:
Boil your pasta in generously salted water (cook until al dente).
Drain and hit pasta with a glug of GEVOO so it doesn’t stick. Set aside.
On medium fire, add a glug of GEVOO.
Sauté spinach and green onion/scallion; salt and pepper until soft and let cool a few minutes.
In a blender, add the spinach mixture, dill, olive oil, and cheese; purée until silky smooth.
Add purée to a heavy pan and then add pasta. Mix well over medium heat.
Serve with sliced cherry tomatoes on top.
Drizzle with Fancy Peasant GEVOO.
