Sexy Spaghetti with Spinach Purée


  • 1 pound pasta
  • 2 green onions or scallions, chopped
  • 3 tablespoons dill, chopped
  • 1 pound spinach
  • Salt and pepper
  • 8-10 cherry tomatoes sliced in half for serving
  • ¼ of a cup of Fancy Peasant GEVOO
  • ¼ cup Κεφαλογραβιέρα cheese or Parmesan (optional)


  1. Boil your pasta in generously salted water (cook until al dente).
  2. Drain and hit pasta with a glug of GEVOO so it doesn’t stick. Set aside.
  3. On medium fire, add a glug of GEVOO.
  4. Sauté spinach and green onion/scallion; salt and pepper until soft and let cool a few minutes.
  5. In a blender, add the spinach mixture, dill, olive oil, and cheese; purée until silky smooth.
  6. Add purée to a heavy pan and then add pasta. Mix well over medium heat.
  7. Serve with sliced cherry tomatoes on top.
  8. Drizzle with Fancy Peasant GEVOO.
