Κεφτέδες γαλοπούλας με λαχανικά

Veggie Stuffed Biftekia

It's common to find a little surprise in the heart of a Greek Bifteki, usually, it's feta, but we stuff ours with loads of veg, heavy on the leeks, and they are divine!

Veggie Stuffed Biftekia


  • 1 package of organic ground turkey
  • 1 large sweet onion, finely chopped
  • ⅓ cup Fancy Peasant GEVOO
  • 1 egg
  • ½ bunch fresh chopped parsley
  • ½ cup oatmeal (optional)
  • 1 bag baby spinach
  • 1 cup feta
  • 2 scallions, finely chopped
  • Salt and black pepper


  1. Preheat oven to 400°
  2. Sauté scallions and baby spinach in GEVOO for 1 minute. Place in a large mixing bowl and add feta, salt, and black pepper. Mix well and set aside.
  3. In a large mixing bowl, add turkey, onion, parsley, egg, and knead well. Cover and place in the refrigerator for 30 minutes.
  4. After, take your mixture and divide into two balls. Place one ball on parchment lined paper with GEVOO and roll it out to a larger circular shape.
  5. On one side, add half of your stuffing and fold your mixture to create a crescent shape with the other half. Press on edges to close well.
  6. Transfer your stuffed bifteki to a baking tray.
  7. Bake for 25 minutes
