Wild Shrimp with Skordolia

Garlic and Shrimp. What could be better?

Wild Shrimp with Skordolia


  • 1 lb. wild shrimp (deveined, shell on)
  • 2 cloves fresh garlic, minced
  • Fancy Peasant GEVOO
  • 1 cup of halved cherry tomatoes
  • 2 boiled potatoes
  • Salt and Peper
  • Flat-Leaf Parsely


  1. Add the GEVOO to a large nonstick pan on medium fire and heat for a few minutes.
  2. Add garlic and tomatoes. Cook down for a few minutes.
  3. Add shrimp and cook until they are done (when they have turned completely opaque with a pearly pink color, making sure not to overcook). Remove and set aside.
  4. Take your boiled potatoes and smash em! Add plenty of GEVOO, salt and pepper.
  5. Serve altogether with parsley on top!
