Celebration Rice

This spiced Greek rice with tomatoes and bell peppers is a celebration of color, flavor, bounty and joy! Bring it to the table and make everyone happy.

Celebration Rice

Ingredients:

  • 3 tbsp Fancy Peasant Greek Extra Virgin Olive Oil
  • 3 tbsp butter
  • 3 garlic cloves, finely chopped
  • 1 1/2 cups long grain rice
  • 1 1/2 tsp Fancy Peasant Mountain Oregano Salt
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • 1/4 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground coriander
  • 1 3/4 lbs canned chopped tomatoes or 2 1/4 lbs fresh tomatoes, chopped
  • 1 tbsp tomato paste
  • 1 cup veg or chicken stock
  • 1 red bell pepper, finely chopped
  • Flat-leaf parsley for garnish (optional)

Method:

  1. Combine olive oil and butter in a large large pan, melt together.
  2. Add the onions and garlic and cook over low heat, stirring occasionally until softened.
  3. Stir in the rice and mix for a few minutes until the grains are thoroughly coated in the olive oil and butter mixture.
  4. Add the salt, sugar, spices, tomatoes, tomato paste, and stock. Mix well and cover.
  5. Increase the heat to high and bring to a boil.
  6. Reduce the heat and simmer for 20 minutes.
  7. Add the bell peppers and simmer for five more minutes.
  8. Serve hot or at room temperature.Garnish with fresh flat-leaf parsley if you Fancy.
