Crispy Herby Meat-Stuffed Tortillas

There’s nothing I love more in the summer than firing up the grill and throwing on these crispy, herby meat-stuffed tortillas.

Instead of the usual pita, I use duck fat tortillas for extra crunch and texture. The outside crisps up beautifully while the meat filling stays juicy and flavorful. And the real magic? A slather of honey lemon yogurt sauce that ties it all together and sends you straight to your happy place.

Crispy Herby Meat-Stuffed Tortillas

Ingredients:

  • 1/4 cup Fancy Peasant Extra Virgin Olive Oil (GEVOO) — add more if needed for moisture
  • 1 lb ground beef
  • 1 lb ground pork
  • 2 tsp mountain oregano salts
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 2 jalapeños, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 bunch green onions/scallions, finely chopped
  • 1 bunch fresh flat-leaf parsley, finely chopped
  • 1/2 bunch chives, finely chopped

Method:

  1. In a large bowl, combine all the meat filling ingredients. Mix well to incorporate all the herbs and spices.
  2. Lay a duck fat tortilla flat on a clean surface.
  3. Spoon the meat filling onto one half of the tortilla, then fold over and press gently to seal.
  4. Repeat with remaining tortillas, then brush both sides with GEVOO.
  5. Grill over medium fire until the tortillas are golden brown and crispy on both sides — about 3–4 minutes per side depending on heat.
  6. Serve hot, with a generous spoonful of honey lemon yogurt sauce on the side or drizzled over the top.
