Fancy Carrots and Crispy Chickpeas Over a Silky Feta Spread

Wow — so many requests for this recipe, and I get it… she’s a scene stealer. Made with just a few powerhouse ingredients — crispy chickpeas, liquid gold, mountain oregano, salts, organic carrots, and that silky honey feta sauce.

Fancy Carrots and Crispy Chickpeas Over a Silky Feta Spread

Ingredients:

For the Vegetables:

  • Fancy Peasant liquid gold (enough to generously coat veg)
  • 2-3 tbsp maple syrup
  • 1 tbsp Fancy Peasant mountain oregano salts
  • 1 can organic chickpeas
  • 6 carrots, peeled and sliced
  • A dusting of paprika
  • Fresh flat leaf parsley to garnish

Feta Yogurt Spread:

  • 6 oz Greek yogurt
  • 4 ounces feta
  • 1–2 tbsp Fancy Peasant honey
  • Juice of half a lemon
  • 2-3 tbsp of Fancy Liquid Gold
  • A pinch of Fancy Mountain oregano salts

Method:

For the Vegetables:

  1. Preheat oven to 350°F.
  2. Cover the chickpeas in olive oil, mountain oregano salts, and paprika.
  3. Cover the carrots in olive oil, Fancy Peasant Mountain Oregano Salts, and a glug of organic maple syrup.
  4. Roast both on 350 until the chickpeas for 20 minutes.



Feta Yogurt Spread:

  1. Mix well until smooth.
  2. Beautifully spread the feta yogurt dip on a platter, assemble the vegetables on top, and garnish with parsley.
