Fancy Feta Filled Figs

An ode to my Babba. I will never forget the stories that my father told me growing up that were centered around food. Although there was very limited cuisine in his village, it also happened to be the healthiest: cornbread, wild mountain greens, mountain teas, olives and olive oil, cheese, beans, honey, plums, walnuts, and his favorite fresh figs you could pick off the tree. He would love this Fancy Version of the Peasant figs he remembers so well.

Sticky, salty, sweet figs - serve over our Greek lemon honey yogurt, or on their own as the most delicious bite.

Fancy Feta Filled Figs

Ingredients:

  • 6 Figs, halved
  • Feta, cubed
  • Fancy Peasant Greek Extra Virgin Olive Oil
  • Greek Mountain Oregano Salt
  • Prosciutto, sliced in half lengthwise
  • Pomegranate seeds
  • Flat-leaf Parsley, minced

Method:

  1. Preheat the oven to 350°F.
  2. Slice each fig in half and use a small spoon to scoop out
    enough flesh to add your Feta.
  3. Fill the heart of the fig with feta cube.
  4. Wrap each fig tightly in prosciutto.
  5. Cover with oil and Greek Mountain Oregano Salt.
  6. Bake for 20 minutes.
  7. Top with pomegranate seeds, flat-leaf parsley, and of course more liquid gold.
