Beet juice bagels, otherwise known as Fancy Peasant Love Bread. The amazing thing about beets (besides being insanely healthy and delicious) is their power to completely transform a dish with the most stunning and vibrant color. Get into it and make it for someone you love.
Ingredients:
5 oz bread flour
12 oz organic all-purpose flour
1 teaspoon salt
2 tablespoons brown sugar
1 tablespoon dry yeast
1 1/2 cup of water
1 large cup beet juice
Sesame seeds to coat
Sweet Water:
2 cups of water
2 tablespoons brown sugar
In a large mixing bowl, add brown sugar and water and mix well. Set aside.
Peel and cut your beets into small pieces and boil for 15 minutes. Remove the beetroot and let water cool.
In a large mixing bowl, add all dry ingredients and then gradually add beet water. Begin kneading the dough.
Shape dough into a ball and set aside in a warm place for 40 minutes.
Once dough is proofed, shape the buns into rings, hearts, bagels, or rose shapes and dip them in the sweet water. After, dredge sesame seeds on both sides.
Transfer onto a non-stick baking tray and bake for 15-20 minutes.
