Gluten-Free Olive Oil Banana Bread with Dark Chocolate Chunks

Ingredients:
3 overripe bananas, mashed
1 egg
1/4 cup almond milk
1 tsp vanilla extract
1/2 cup Greek extra virgin olive oil
1/2 cup maple syrup
Pinch of sea salt
1 1/2 cups almond flour
1 tsp baking powder
1/2 tsp baking soda
Dark chocolate chunks

Method:
Preheat oven to 350°F and line a baking tin with parchment paper.
In a large bowl, mash the bananas until smooth. Whisk in the egg, almond milk, vanilla extract, olive oil, and maple syrup.
Fold in the almond flour, baking powder, baking soda, and sea salt until fully combined.
Stir in the dark chocolate chunks.
Pour the batter into the parchment-lined baking tin and bake for 45–50 minutes, until golden on the outside and gooey in the center.
Let cool before slicing and serving.
