Gluten Free Zucchini Pita

We make this twice a week and eat it for breakfast, lunch, and dinner. Accompanied with a cup of coffee for breakfast or as an after-school snack, your kids will love this gluten-free gem.

Gluten Free Zucchini Pita

Ingredients:

  • 2 small or 1 large zucchini, box grated
  • 1 cup whole milk or nut milk
  • 3/4 cup cottage cheese
  • 10 oz goat milk feta
  • 1 cup organic gluten free yellow cornmeal
  • 2 eggs
  • Fancy Peasant Extra Virgin Olive Oil

Method:

  1. Preheat oven to 400°F.
  2. Coat the bottom and sides of the pan with Fancy Peasant GEVOO.
  3. Mix all ingredients in a large mixing bowl, until the consistency is similar to pancake batter *not too thin or watery.
  4. Pour into baking pan.
  5. Bake for 45 min to 1 hr or until your pita is golden brown.
  6. Let pita cool, slice, and serve.
