Gluten Free Zucchini Pita

We make this twice a week and eat it for breakfast, lunch, and dinner. Accompanied with a cup of coffee for breakfast or as an after-school snack, your kids will love this gluten-free gem.

Gluten Free Zucchini Pita


  • 3 zucchinis, grated on medium or large side of box grater
  • 1 cup almond milk
  • 10 oz goat milk feta
  • 1 cup organic gluten free yellow cornmeal
  • 2 eggs
  • Fancy Peasant GEVOO


  1. Preheat oven to 400°F
  2. Coat the bottom and sides of the pan with Fancy Peasant GEVOO
  3. Mix all ingredients in a large mixing bowl, until the consistency is similar to pancake batter *not too thin or watery
  4. Pour into baking pan
  5. Bake for 45 min to 1 hr or until your pita is golden brown
  6. Let pita cool, slice, and serve
