Greek Glow Raw Salad

I could not love this combo of shredded kale, sweet pomegranate seeds, pumpkin seeds, and salty cheese more. Tossed with our white balsamic, shallot vinaigrette, this is the perfect fall salad.

Greek Glow Raw Salad

Ingredients:

For Salad:

  • 1 Tbsp Fancy Peasant  Extra Virgin Olive Oil
  • 2 heads kale, chopped
  • 1/2 red onion, chopped
  • Arils from 1 pomegranate
  • 1/3 cup pumpkin seeds
  • A half a bunch of flat leaf parsley, chopped
  • 1/2 cup grated pecorino romano cheese 
  • The juice of 1 lemon 
  • 1 Tbsp Fancy Peasant Mountain Oregano Salt

For Dressing:

  • 1/3 cup Fancy Peasant Extra Virgin Olive Oil
  • 2-3 Tbsp real maple syrup 
  • 1 shallot, thinly sliced
  • 2 Tbsp fancy Peasant White Balsamic Vinegar
  • 1 Tbsp Fancy Peasant Mountain Oregano Salt
  • 1 Tbsp of high quality mustard

Method:

For Salad:

  1. Separate Kale leaves from veins and chop.
  2. Message kale in Fancy Peasant Extra Virgin Olive Oil and lemon, tenderizing the kale.
  3. Add flat leaf parsley, pomegranate seeds, red onion,  pumpkin seeds and  Fancy Peasant Mountain Oregano Salt.
  4. Top with grated pecorino romano cheese.

For Dressing:

  1. Combine all ingredients in a mason jar. 
  2. Shake vigorously until thick and creamy.
  3. Pour over salad and enjoy!
