High Protein Grilled Cheese Breakfast Burritos

Ingredients:

  • 1/2 sweet onion, diced
  • 3 pounds extra lean beef mince
  • 1 teaspoon Fancy Peasant Mountain Oregano Salt
  • 1 teaspoon paprika
  • 3 tablespoons favorite tomato sauce
  • 14 eggs
  • 1 tablespoon purified water
  • Additional Fancy Peasant Mountain Oregano Salt, to taste
  • 2 tablespoons butter
  • 10 tortillas, warmed
  • 10 tablespoons shredded mozzarella, divided (about 1 tablespoon per burrito)

Method:

  1. In a large skillet over medium heat, sauté the diced onion until softened. Add the extra lean beef mince, Mountain Oregano Salt, and paprika. Cook until the beef is fully browned. Stir in the tomato sauce and cook for another 2 to 3 minutes. Set aside.
  2. In a bowl, whisk the eggs with the purified water and a pinch of Mountain Oregano Salt. Melt butter in a large pan over medium low heat and gently scramble the eggs until just set and fluffy.
  3. Lay out the warm tortillas. Divide the beef mixture evenly among the tortillas, then top with scrambled eggs and about 1 tablespoon shredded mozzarella per burrito.
  4. Fold in the sides and roll tightly into burritos.
  5. For a grilled cheese style finish, place seam side down in a lightly buttered pan and cook until golden and lightly crisp.
