Kokkinisto - Greek Beef Stew


  • 3 pounds grass-fed beef (stew meat)cut into cubes
  • 1 large onion, finely chopped
  • 2 carrots, chopped
  • 2 cloves of garlic, finely chopped
  • 1 1/2 cups tomato sauce
  • 1 cup of white wine
  • 7 cups of boiling water
  • 1 cup olive oil
  • 1 bunch of parsley, chopped
  • 2 cinnamon sticks
  • 2-3 bay leaves
  • Salt
  • Freshly ground black pepper


  • Coat the bottom of a large, heavy pot with GEVOO on high heat and Sauté the pieces of meat until golden brown. Brown on the other side.
  • Add the onion, carrot, and garlic and continue sautéing for 3-4 minutes.
  • Add wine, let the alcohol evaporate for 2-3 minutes, and then add the tomato sauce, boiling water, cinnamon, and bay leaves.
  • Mix Well
  • Cover the pot and let it simmer on low heat until the meat softens for about 1 hour.
  • Add the flat-leaf parsley, salt, and pepper.
  • Serve with fried potatoes, spaghetti, or pilaf.
