Longevity Chicken Soup

Ingredients:

  • 1 whole pasture raised chicken, or 4 organic pasteurized chicken breasts
  • Optional: 2 additional chicken breasts for higher protein
  • Optional: collagen peptides
  • 1 pack high quality chicken bone broth
  • 8 cups filtered hot water
  • Parmesan rind
  • 1 lemon, zest and juice
  • Fancy Peasant Extra Virgin Olive Oil
  • 1 whole onion, halved
  • 1/2 bulb garlic
  • 1 full pack organic celery, chopped
  • 1 full pack organic carrots, chopped
  • 1 organic lemon
  • Greek pasta stars or pastina (Asteria)
  • Fancy Peasant Mountain Oregano Salts
  • Optional garnish: chopped flat leaf parsley

Method:

  1. Heat Fancy Peasant Extra Virgin Olive Oil in a large pot. Sear the chicken just until the outside is lightly golden.
  2. Add the halved onion, chicken bone broth, and filtered hot water. Simmer for about 20 minutes.
  3. Add the carrots and celery. Continue cooking until vegetables are tender.
  4. Remove and drain all vegetables. Strain the broth into a separate bowl and reserve.
  5. Transfer the drained vegetables to a blender. Add some of the reserved broth and puree until completely smooth and silky.
  6. Return the pureed vegetables and strained broth back to the pot. Add the Parmesan rind and simmer gently.
  7. Shred the seared chicken and return it to the pot.
  8. Add Greek pasta stars, rice, or preferred grain. Cook about 10 minutes, or until tender.
  9. Season with mineral salt. Finish with a generous drizzle of Fancy Peasant Extra Virgin Olive Oil. Add chopped flat leaf parsley and lemon zest or a squeeze of lemon to brighten, if desired.
