Heat Fancy Peasant Extra Virgin Olive Oil in a large pot. Sear the chicken just until the outside is lightly golden.
Add the halved onion, chicken bone broth, and filtered hot water. Simmer for about 20 minutes.
Add the carrots and celery. Continue cooking until vegetables are tender.
Remove and drain all vegetables. Strain the broth into a separate bowl and reserve.
Transfer the drained vegetables to a blender. Add some of the reserved broth and puree until completely smooth and silky.
