Patates Tiganites (Greek Olive Oil Fries)

The Greek french fry. Serve them as is, or drench them in Greek mountain oregano and squeeze a whole lot of lemon over them as I do. Either way, you win.

Patates Tiganites (Greek Olive Oil Fries)


  • 4 small yellow potatoes, peeled and cut into long thick pieces
  • 1 cup Fancy Peasant GEVOO
  • Salt
  • Oregano


  1. Salt potatoes generously and mix well.
  2. In a pan (ideally one where you can lay each potato in one layer), add oil about 1-inch high.
  3. Once oil is sizzling, add potatoes. Fry for 8-10 minutes (turning half-way) until golden brown.
  4. Plate and season with salt and oregano.
