Prasorizo (Greek Rice with Leeks)

My new love affair with leeks kept me hot all summer long. When a dear friend caught on to my obsession, she handed me this leek party recipe. And well, the rest is history.

Prasorizo (Greek Rice with Leeks)


  • 3 large leeks, sliced
  • 1 medium onion, chopped
  • 2 tomatoes, grated
  • ½ cup white rice (uncooked)
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • ½ cup Fancy Peasant GEVOO
  • 2 cups water
  • Salt and black pepper


  1. Sauté onions until golden brown.
  2. Add grated tomatoes and sauté for 3 minutes.
  3. Add leeks, rice, water, and mix.
  4. Cover and simmer for about 30 minutes until rice is soft (checking often and adding hot water as needed).
  5. Season with salt and black pepper. Drizzle with GEVOO.
