Add the GEVOO to a large nonstick pan on medium fire and heat for a few minutes.
Add garlic and shrimp until they are done (when they have turned completely opaque with a pearly pink color, making sure not to overcook). Remove and set aside.
In the same pan, add the onion, grated tomato, tomato paste, ¼ cup Fancy Peasant Greek Extra Virgin Olive Oil, and Fancy Peasant Greek Mountain Oregano Salt to taste. Cook for about 6 minutes, stirring occasionally, until softened and fragrant.
Add shrimp back into pan. Add feta and shut off your burner (at this point, you can also add any pasta, noodle, or zucchini noodle you desire).
