Spanakopita Sandwich

When Iā€™m cooking a feast for friends or holiday, nothing makes me more happy than taking a break to bite into a decadent spanakopita sandwich - it literally sustains me in every way and gives me the energy and happiness I need to survive the madness that awaits.

P.S. Also perfect to serve for lunch alongside our Fancy Peasant Olive Oil French fries. Heaven.

Spanakopita Sandwich

Ingredients:

  • 4 tbsp Fancy Peasant Greek Extra Virgin Olive Oil
  • 1 tbsp butter, brought to room temperature
  • 4 slices sourdough bread or other good-quality bread (we fancy Bread Alone)
  • 3-4 scallions, chopped
  • 10 oz. bagged baby spinach
  • Fancy Peasant Greek Mountain Oregano Salt
  • 2 tsp chopped dill
  • 2 tsp fresh flat-leaf parsley
  • 6 oz. Greek feta, crumbled

Method:

  1. Divide the butter evenly between the four slices of bread and spread thinly on one side of each slice.
  2. In a medium skillet, heat olive oil over medium-high heat. Add the scallions and sauteĢ until cooked well.
  3. Add spinach and Greek Mountain Oregano Salt and cook down until the spinach is softened but not soggy. Take off heat and let cool a bit.
  4. Add parsley, dill, feta and mix.
  5. When the mixture is cool enough to handle, assemble the sandwiches by placing two slices of bread, butter side down, on your pan to brown well.
  6. Divide the spinach mixture in half and place half atop each slice.
  7. Top with the remaining cheese and slices of bread, butter side up. Cook for a few minutes, then flip the complete sandwich(es) to cook the other side.
  8. Serve with Fancy Peasant Olive Oil French Fries.
