I love this on my holiday table. It's an absolute stun every time.

Spanakopita Turkey Bifteki


  • 1 package of organic ground turkey
  • 1 large sweet onion, finely chopped
  • ⅓ cup Fancy Peasant GEVOO
  • 1 egg
  • ½ bunch fresh chopped parsley
  • ½ cup oatmeal (optional)


  • Preheat oven to 400°
  • Sauté scallions and baby spinach in GEVOO for 1 minute. Place in a large mixing bowl and add feta, salt, and black pepper. Mix well and set aside.
  • In a large mixing bowl, add turkey, onion, parsley, egg, and knead well. Cover and place in the refrigerator for 30 minutes.
  • After, take your mixture and divide into two balls. Place one ball on parchment lined paper with GEVOO and roll it out to a larger circular shape.
  • On one side, add half of your stuffing and fold your mixture to create a crescent shape with the other half. Press on edges to close well.
  • Transfer your stuffed bifteki to a baking tray.
  • Bake for 25 minutes
