The Best Chocolate Banana Bread Ever

Ingredients:

  • 3 very ripe medium bananas, mashed
  • 3 eggs
  • 2 tablespoons Fancy Peasant extra virgin olive oil
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • 2½ cups almond flour
  • ½ cup cacao powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup dark chocolate chips

To Top:

  • 1 large banana, halved lengthwise
  • 3 teaspoons dark chocolate chips

Method:

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the mashed bananas, olive oil, eggs, maple syrup, and vanilla until well combined.
  3. Add the almond flour, cacao powder, baking soda, and salt. Stir until the batter is smooth.
  4. Fold in the dark chocolate chips.
  5. Pour the batter into a parchment lined loaf pan, smoothing the top with a spatula.
  6. Place the halved banana on top of the batter and sprinkle with the remaining dark chocolate chips.
  7. Bake for about 1 hour, or until a knife inserted into the center comes out almost clean.
