Ingredients:
1 pound organic white flour
1 tablespoon dry yeast
1 ½ cups lukewarm water
2 tablespoons of Fancy Peasant GEVOO
1 tablespoon vinegar
Salt
What you'll need
3L Everything Olive Oil

Method:
Make a hole in the middle of all your dry ingredients and pour all liquid ingredients in. Mix.
Transfer dough to a floured kitchen surface and knead into a soft dough, adding some extra flour if sticky
Knead into a large dough ball add back into a bowl and cover with plastic wrap and a kitchen towel
Let rest somewhere warm for about 30 minutes; it will double in size. (during this time you can make your filling.)
On a floured surface roll your dough out into an even shaped log. ( think French baguette)
Divide dough into 6- 8 equal pieces (about 3 inches each )
Knead these pieces into small dough balls (they should be soft, malleable and smooth) use more flour until you get this consistency
Open each dough ball by gently rolling out your ball with the rolling pin.
Using a small plate, press into your dough to mold out circles
Add about 2 tablespoons of filling to one side, before folding the dough in half
Firmly press the edges together with your fingers and then repeat using a fork to press and seal edges
Heat a generous glug of GEVOO to cover the bottom of a pan on medium-high fire and cook for 2 minutes on both sides until golden brown.
