Dark Chocolate and Olive Oil Melomakarona

If you're wanting something a little sexier than the traditional honey-soaked cookie, this dark chocolate and orange combo is for you.

Dark Chocolate and Olive Oil Melomakarona

Ingredients:

For the syrup

  • 2 cups organic honey
  • 1 cup of water
  • 2 cinnamon sticks
  • Juice of 1 lemon

For the dough

  • 1 cup olive oil
  • 5 oz honey
  • 1/2 cup water
  • 1/2 cup orange juice
  • 4.5 oz tall semolina
  • 1 teaspoon baking soda
  • 2 teaspoons of cinnamon
  • 1 teaspoon clove powder
  • 1 teaspoon baking powder
  • Zest from 1 orange
  • 1lb 2oz flour

For the decor

  • 5 oz chopped walnuts for topping.
  • 2-3 slices of orange
  • Melted Dark Chocolate

Method:

For the Syrup

  1. Add all the ingredients to a saucepan and boil for 3 minutes.
  2. Leave aside to cool

For the Cookies

  1. In a bowl, add all the liquid ingredients and then the solids.
  2. Mix until it becomes fluffy
  3. Form the melomakaronas, each weighing 1.6 oz.
  4. Bake in a preheated oven for about 15 minutes at 340 F.
  5. As soon as we take them out of the oven, dip them in the cold syrup for 2 minutes.
  6. Drain and sprinkle with honey and chopped walnuts, or dip in dark chocolate :)
