Ingredients:
1 large organic sweet potato, or 3 small sweet potatoes, thinly sliced on a mandolin
Fancy Peasant Liquid Gold Greek Extra Virgin Olive Oil, to coat
Fancy Peasant Mountain Oregano Salt, to taste
Organic maple syrup, for drizzling

Method:
Preheat oven to 375°F.
Using a mandolin, slice the sweet potatoes into thin, even rounds.
Arrange slices in a single layer on a parchment lined baking sheet.
Generously coat with Fancy Peasant Liquid Gold Greek Extra Virgin Olive Oil.
Sprinkle with Fancy Peasant Mountain Oregano Salt.
Lightly drizzle with organic maple syrup.
Bake for about 25 minutes, or until golden and crisp at the edges.
Cool slightly to crisp further, then serve.
