Green Goddess Pasta

A vibrant, nutrient-packed comfort meal straight from the garden.

Green Goddess Pasta

Ingredients:

  • 1 pound pasta of your choice
  • 2-4 green onions or scallions, chopped
  • A quarter bunch of fresh dill, chopped
  • A half a bunch of fresh flat leaf parsley 
  • 1/2 pound of spinach or 1/2 pound of swiss chard or any wild green you have on hand 
  • ¼ of a cup of Fancy Peasant Greek Extra Virgin Olive Oil
  • Fancy Peasant Greek Mountain Oregano Salt
  • The juice of 1 lemon 
  • 1 garlic clove 
  • ¼ cup Kefalograviera cheese or whatever grated cheese you fancy

Method:

  1. Chop wild green of your choice then blanch.
  2. Boil your pasta in generously salted water (cook until al dente).
  3. In a blender, add scallions, dill, parsley, Fancy Peasant Greek Extra Virgin Olive Oil, lemon, garlic and Fancy Peasant Greek Mountain Oregano Salt; puree until silky smooth.
  4. On medium fire, heat a splash of Fancy Peasant Greek Extra Virgin Olive Oil and green goddess puree into a heavy, heated pan.
  5. Toss in pasta.
  6. Drizzle with Fancy Peasant Greek Extra Virgin Olive Oil. Top with grated cheese of your choice and Fancy Peasant Greek Mountain Oregano Salt.
