Simple Spring Greek Tostada

Simple Spring Greek Tostada

Ingredients:

Serving Size- 3

  • 3 corn tortillas
  • 6 eggs
  • 1 large avocado, smashed
  • Half a bunch of flat leaf parsley, chopped
  • Half a bunch of dill, chopped
  • Juice of half a lemon
  • Fancy Peasant Extra Virgin Olive Oil
  • Fancy Peasant White Balsamic Vinegar
  • 8 ounces of frozen sweet peas, steamed and ready to smash
  • Half of a large red onion, thinly sliced
  • Peppercorns
  • Feta (optional)

Method:

  1. Submerge red onions in Fancy Peasant White Balsamic Vinegar and a few peppercorns - set aside to pickle.
  2. Fry your corn tortillas in Fancy Peasant Extra Virgin Olive Oil, until golden brown on both sides - set aside on a cooking rack.
  3. Smash your avocado, peas, 2 tbsp Fancy Peasant Extra Virgin Olive Oil, a squeeze of lemon and Fancy Peasant Mountain Oregano Salts.
  4. Poach your eggs in Fancy Peasant Extra Virgin Olive Oil until cooked to your liking.
  5. Herby Salad - add chopped dill and parsley to 3 tbsp Fancy Peasant Extra Virgin Olive Oil, and a squeeze of lemon-mix.
  6. Spread your avocado/peas smash onto crispy tortilla, add herby salad and eggs.
  7. Garnish with pickled onions and feta cheese.
  8. Serve open faced.
