Greek Cauliflower Snowflakes

Greek Cauliflower Snowflakes

Ingredients:

  • 1 large Cauliflower (at least 2 1/2 pounds)
  • Fancy Peasant Greek Extra Virgin Olive Oil
  • Fancy Peasant Greek Mountain Oregano Salts
  • 1/2 cup of Panko
  • 1/2 cup of grated Pecorino Romano cheese

Method:

  1. Preheat the oven to 400.
  2. Remove the leaves and trim stems but keep core intact.
  3. Slice cauliflower in large 1/2-inch thick slices, using all the “snowflakes” that fall apart as you cut.
  4. In a bowl, mix Pecorino, breadcrumbs, and Fancy Peasant Mountain Oregano Salt, then sprinkle onto a sheet pan.
  5. Add cauliflower and then drizzle with olive oil.
  6. Roast for 20–30 minutes until tender.
  7. Immediately scrape with a spatula and serve hot or room temp.
  8. Garnish with fresh flat-leaf if you fancy.
