In a large mixing bowl, combine the chicken, onions, and yogurt. Massage well so everything is evenly coated. Add Fancy Peasant GEVOO, paprika, and Fancy Peasant Mountain Oregano Salts, then mix thoroughly to infuse all the flavors.
Over medium-high heat, coat the bottom of a large oven-safe skillet with Fancy Peasant Extra Virgin Olive Oil. Add the chicken mixture to the pan, then layer the sliced peppers on top.
Cover and let the mixture cook down slowly — the yogurt will release liquid. Stir halfway through cooking, allowing the liquid to fully evaporate so the chicken and vegetables can crisp.
Continue cooking until everything is golden brown and beautifully caramelized.
